1 POT CARIBBEAN CURRY..EASY!!




Three minute protein-packed curry

Ingredients

  • 1 pre-cooked chicken breast
  • 1 tin of chickpeas
  • 1 small pot of half-fat sour cream
  • 1 pinch of curry powder

Method

  • Drop the knife: this is a chopping-free recipe. Shred the chicken into tiny strips with your fingers. Don’t be afraid to get your hands dirty – this will really pad out your meal and make it feel more like a feast. Put your fowl in the shaker.
  • Crack open your can of chickpeas and drain off the water. Add half the can to the shaker (that’s 8g of extra protein), along with three generous dollops of sour cream; use full-fat if you’re looking to add size. Give it all a quick stir.
  • Finally, add 1tbsp of curry powder and mix well. Put the lid on the shaker but leave the stopper open so it doesn’t explode in the microwave.
